Cargill to invest $20m to expand egg processing plant in Minnesota, US

Cargill is investing $20m to expand its egg processing facility in Big Lake in the US state of Minnesota.

The expansion project is being taken up by the agribusiness giant to meet growing customer and consumer demand for a range of cooked egg products.

Cargill through the expansion project will equip the Big Lake egg processing plant with capabilities to pasteurize, mix and cook a number of new egg products to serve its foodservice and protein ingredient customers.

The company will begin construction on the expansion project in May this year, with the new capabilities planned to enter into operations in January 2019.

The expansion will see the egg processing facility’s annual requirement for eggs from family farms in the area, surge to 170 million, which is twice the number of eggs that are currently sourced.

The company said that the expansion of the Big Lake egg processing plant is part of its approximately $900m investments made in the last two years in North America to grow its traditional protein business.

Cargill Big Lake plant general manager said: “We continue to invest in the traditional protein space to provide our foodservice and food ingredient customers innovative, high-quality cooked egg products to meet growing consumer demand.

“This investment underscores our ongoing commitment to the Big Lake community and our employees, egg suppliers and restaurant and foodservice customers throughout the upper Midwest.”

Cargill expects the employment at the Big Lake facility to increase by nearly 16%, leading to a dozen new roles to support the additional production.

Prior to the $20m investment in Big Lake, Cargill had made an investment of $27m in its Lake Odessa egg production plant in Michigan followed by a $12m investment to expand its Mason City egg processing plant in Iowa in 2017.

The Big Lake facility, which opened in 2001, is the second egg processing plant for Cargill in Minnesota, in addition to the Monticello plant.

Recently, the company announced an investment of CAD$22m ($17.08m) in its Canadian operations for installing a controlled atmospheric stunning (CAS) system at its chicken processing plant in London, Ontario.
